Toma Piccante Piemontese DOP
In production since Roman times, Toma Piemontese is one of Italy's oldest known cheeses. While Toma style cheeses are prevalent throughout Northern Italy, the
Piemontese version became the first to receive a DOP in 1996!
Made with milk from cows feeding on elevated pastures throughout the province, this traditional mountain cheese has a delicious meaty semi-soft paste, with
vegetal and woody notes that deepen with age.
The paste, in which the chopped chili is distributed in a regular and homogeneous way, is moderately consistent and elastic, with small and little diffused holes, white, straw-white.
